Mixed vegetables with a light lime
juice marinade.

Ingredients
3-4 medium sized potatoes, diced
1 each red and yellow pepper,
chopped
1 aubergine, diced
2 tomatoes, chopped
4 small white
onions, quartered
2 tbsp lime juice
1 tbsp olive oil
2 flakes
garlic, finely chopped
Salt and pepper to taste

Method
Marinate the vegetables in the oil and lemon juice for about half an hour.
Sprinkle with a little salt and pepper and put them all in a pan; roast at 175o
C for about an hour and a half.
Every half hour, take them out and mix
them up. You can continue to add some more lime juice and salt and pepper if you
wish.
Remove when the vegetables are cooked but still have a little
‘bite’.
